how often should my ice machine be cleaned?

Ice machine cleaning is governed by Food Code 2009, Chapter 4, Part 602.11 (E)(4a–b), which states that machines must be cleaned “at a frequency specified by the manufacturer”—typically two to four times per year—or “at a frequency necessary to preclude accumulation of soil or mold.”

  • Minimum of twice per year is what most of the manufacturers suggest. However quarterly is what we recommend from a food safety perspective. If your ice machine is in a pizza shop or next to a fryer or baking mixer you might require a more frequent cleaning schedule.
